In a skillet, heat a little olive oil over medium heat. Cook the green pepper and, if desired, the corn kernels for 1 to 2 minutes.

Add the meat sauce and chili powder. Bring to a boil, then simmer for 5 to 6 minutes over low-medium heat.

Add the kidney beans. Simmer for 3 to 4 minutes. If desired, add the cilantro and stir.

Garnish half of each tortilla with the meat sauce and cheese mixture. Fold the tortillas over the filling.

In a large skillet, heat a little olive oil over medium heat. Cook the que-sadillas for 2 to 3 minutes on each side.
