Preheat the oven to 190 ° C (375 ° F).

In a large skillet, heat a little olive oil over medium heat. Cook the spinach for 1 to 2 minutes.

Add the meat sauce, sun-dried tomatoes and, if desired, oregano to the pan. Stir. Remove from heat and reserve.

Cut the zucchini in half lengthwise. Using a spoon, scoop out the center of the zucchini leaving a 1 cm (½ inch) free edge.

Place the zucchini on a baking sheet lined with parchment paper. Stuff the zucchini with the spinach mixture, then garnish with feta. Bake for 15 to 18 minutes.

Set the oven to the “broil” option and continue cooking for 2 to 3 minutes.
