In a saucepan, heat a little olive oil over medium heat. Brown the Tofu cubes for 4 to 5 minutes on all sides. Set aside on a plate.

In the same pan, cook the onion and pepper for 1 to 2 minutes.

Add the rice and 375 ml (1 ½ cups) of water. Season with salt and freshly ground pepper, then stir. Bring to a boil, then cover and simmer for 10 minutes over low-medium heat.

Add the sauce and bring back to a boil. Continue cooking for 10 to 12 minutes.

Add the tofu cubes and, if desired, the parsley. Stir.
